How to eat a crawfish - pull off its head, break apart its tail and pull out the meat. If you're a true southerner, you will ignore the yellow stuff and if you're a true Louisianian, you will suck the head. Now that everyone is quite impressed and ready to have their 1st mudbug, let me tell you that they're actually awesome! We had a lot of the friends come down for a true crawfish boil with 400# of crawfish (or mudbugs), lots of potatoes, corn, & mushrooms, all seasoned with cajun seasoning. We didn't have nearly enough people there, so we were deheading/de-meating them into the evening. I think lots were taken home to enjoy this week!

MMM! Crawfish! It's been a long time since I've enjoyed boiled crawfish. I really don't think there's any better seafood!
